Elisen Lebkuchen (Soft Gingerbread)
There are dozens if not hundreds if different “gingerbreads” in Germany. Funnily enough the spice mix rarely actually includes ginger. Our hometown, Nuremberg, is pretty much the capital of “Lebkuchen” (gingerbreads), so these are particularly near and dear to our hearts.
The "Elisen Lebkuchen" is a specialty soft-style gingerbread that is traditionally gluten-free (so is ours). It is made from almond flour, mixed peel, honey and spices and then coated in chocolate or sugar-glazed.
The literal translation of Lebkuchen is “cake of life” and it is rich, nutritious, and absolutely delicious.
Please note: The gingerbreads are baked on gluten-free, edible rice paper.
